3-ingredient oat pancakes

These flour-free pancakes are delicious, family-friendly - and only require three ingredients. You can then customise to your liking, should you wish! You can stack them up and add toppings, or pack them for on the go snacks.

There are 3 core ingredients:

  • 1 ripe banana

  • 2 eggs

  • 1 cup of oats

Mix them all together and you get your pancake batter. This will make about 5-6 pancakes so adjust quantities accordingly but I warn you that they are pretty filling!

Optional extras in the pancake batter if you want to pack in some extra nutritional punch:

  • 1 tbsp chia seeds (reduce oats slightly)

  • 1 tbsp ground flaxseeds (reduce oats slightly)

  • 1/2 tsp cinnamon

  • Vanilla paste / essence

  • Pinch of sea salt

Sometimes I also add cacao, turmeric, matcha and other types of seeds. You can really get creative!

Fry your pancakes until golden brown on each side and holding shape, but still quite soft to touch. I fry in butter or coconut oil.

Options to serve:

  • Eat plain! Really delicious plain

  • Make a sugar-free berry coulis. Gently heat some fresh / frozen berries in a small sauceplan with 1tbsp of water. Heat until the fruit starts to break down and the liquid thickens

  • Live yoghurt / Greek yoghurt

  • Lemon zest

  • Fresh berries

  • Bee pollen

  • Cacao nibs

  • Nuts / seeds

  • A smidge of maple syrup / honey

Feel free to make extra and store in an airtight container in the fridge for up to 3 days.
