Dark chocolate & raspberry oat cookies

healthier dark chocolate raspberry oat cookies

A healthier alternative to store-bought cookies, which are high in sugar, refined carbohydrates, additives and oils.

Makes approximately 12 cookies

Ingredients:

  • 75ml maple syrup or honey

  • 60g coconut oil or unsalted butter (or use salted butter and leave out the added salt)

  • 1 large egg

  • 1 tsp vanilla extract

  • 90g oats

  • 60g whole wheat flour

  • 1 tsp baking powder

  • Pinch salt

  • Fresh raspberries

  • 50g dark chocolate (>70%)

Method:

  • Preheat oven to 180 degrees C

  • Line a baking tray with non-stick baking paper or a silicone mat

  • In a large bowl, mix the honey/maple syrup, coconut oil/butter, egg, and vanilla. Stir through the oats and salt and then sift in the wholewheat flour and baking powder

  • Stir through the dark chocolate

  • You have two options for using the raspberries: 1) crumble them through the cookie dough mixture. Or 2) place a raspberry on top of each cookie

  • Spoon the cookie dough onto the lined baking tray to desired size (remember, they will expand!)

  • Bake for 10-15 minutes, until golden and holding shape but still soft in the middle

  • Allow them to cool before eating

  • Enjoy!
