Chewy oat bites

These soft, chewy oat bites are refined-sugar free and all-natural! Note that these are still quite sweet due to the natural sugars in the banana and dates, so I would recommend having them as a dessert after a well-balanced meal, rather than as a snack in between meals - or before exercise or whilst on a hike :)

Makes about 10 oat bites.

Ingredients:

  • 2 ripe bananas

  • 1 tsp cinnamon

  • 1 tsp vanilla

  • 8 dates, stone removed (if the dates are quite tough, you might want to soak them in some hot water for an hour prior to using)

  • 1 tbsp peanut butter

  • 2 tbsp butter (room temp or melted)

  • 1 tbsp pumpkin seeds (optional - or some seeds / nuts of choice)

  • Pinch of salt

  • 100g oats

  • 1/2 tsp baking powder

Method:

  • Pre-heat the oven to 180 degrees C

  • Blend together everything - apart from the oats and pumpkin seeds - in a blender

  • Don’t worry if it’s not fully smooth, it doesn’t matter!

  • Spoon the blended mixture into a big bowl. Stir through the oats and pumpkin seeds

  • Once mixed, spoon the mixture into a silicone muffin tray

  • Pop in the oven for 15-20 minutes - until they hold shape but aren’t burnt

  • Allow to cool for 10-15 minutes before eating
